Made a quiche today... among other things with this very abstract recipe I found on some question and answer website:
make a pie crust
sautee some shallots, leeks, onions, scallions, shitake and garlic and spinach. Season with black pepper and sea salt
In a blender throw in a block of silken tofu, 1/2 cup soymilk, 1/2 teaspoon of tumeric and blend very well. Add this to the sauteed vegetables and place this in the pie crust. bake at 350 for 45 minutes
Because the recipe was soooo abstract, for my vegetables, I sauteed some onions, spinach, and celery. After I added the vegetables to the tofu, I added sweet corn from the can and chopped olives. Then I decorated with tomatoes to make it pretty :)
I forgot to do a taste test before I put the mixture in the crust. It needed a tiny bit more salt but it was still great.
Now normally I never try a recipe from a website that doesn't have a review on a recipe (been burnt 1 too many times!) but, the supermarkets here in Comayagua have been stocking up on silken tofu...I don't know why but I've just been buying them! I'm down to 5 from 8! I'm hoping to get as creative with the tofu as possible and this is the next un-reviewed recipe I'm going to try:
one package in blender
banana in blender
dump in some cocoa powder
splash of soymilk
splash of maple syrup
zzzzzrrrrrrrooooommmmmm
have a spoonful
adjust with more cocoa or more sweetener if needed -- maybe a pinch of sea salt
zzzzzrrrrrrrooooommmmmm
chocolate-banana-tofu pudding. yum.
either eat it right there, out of the blender jug, standing at the counter cause it's so damn good, or restrain yourself and pour it into something and chill it for a couple hours so it firms up. (it'll be runny straight out of the blender.)
I'm hoping that it will come out like she says lol! zzzzzzzzzrrrrrrrrrooooommmmmmm!
