Spring rolls!

I wanted to try something new today and Em inspired me to make spring rolls. I wanted them fresh so I used the following as a guide:

I made my own version by only using lettuce, cucumber, carrots and tofu pieces soaked in soya sauce followed the peanut recipe and their how to wrap. Despues? Voila!




As you can see my wrapping skills got better eventually! :)

Mango madness: Mango muffins

Mango season is here!!!!! Que emocion :) We were gifted with 2 bags of mangoes, we gave away one and kept the other but after 2 days of sitting on the counter the fruit flies tried to take over. I peeled them and mad the following recipe which had the girls begging for more! I saw this recipe on about.com and the reviews were okay so I went for it. I baked mine in a muffin tin because I was worried about the baking time. As an added bonus, it was easy to make!

ngredients:

  • 2 cups flour
  • 2 teaspoons baking soda
  • 2 teaspoons ground cinnamon
  • 3/4 cup vegetable oil
  • 1/2 teaspoon salt
  • 1 1/4 cups sugar
  • 1/2 teaspoon vanilla
  • 3 eggs
  • 2 cups diced mango
  • 1/2 cup chopped pecans or walnuts

Preparation:

Sift dry ingredients into a mixing bowl. Make a well and add remaining ingredients. Mix until well blended. Pour into a greased and floured 9 x 5 x 3 inch loaf pan and let stand 20 minutes. Bake at 350° for about 1 hour, or until a wooden pick or cake tester inserted in center comes out clean..

I think I might be trying this again...if I get time to before the season is over. Enjoy! :)

Asian Slaw with Ginger-Peanut Dressing

We decided to have an asian themed lunch this Sabbath and I stumbled across this recipe a while a go on pinterest (of course!) I doubted it right up until the end when I tasted it! At which point I was pleasantly surprised! I  had way too much red cabbage, I used white kidney beans instead of the edamame it called for and wonderfulness started....This is a must try!

Choco-chip muffins...

Powdered soya milk does not know how to curdle but its still good! Camera is broken entonces, there are no pictures but I'll try to take a picture before I eat the last one! ;) Enjoy!
