Would you like to see my buns?

My sticky buns that is...this recipe was one we tried at christmas and it´s so easy and I´m feeling for some right now....try it :)

2 cups all-purpose flour (purpose)
2 tbsps white sugar
4 tsps baking powder
1 tsp salt
1/4 cup margarine
1 cup milk

1/3 cup margarine
1 cup brown sugar (packed)
3 tsps ground cinnamon
1/3 cup raisins

1. Preheat oven to 350 degrees F (175 degrees C). Grease one 12-cup muffin pan.

2. In a large bowl combine the flour, sugar, baking powder and salt. Cut in the 1/4 cup of the butter until the mixture resembles coarse crumbs. Make a well in the middle and pour in the milk. Mix until blended.

3. Turn dough out onto a floured surface and knead 8 to 10 times. Roll dough out into a rectangle 12 inches long and 1 inch thick, trim off any uneven edges.

4. Cream the 1/3 cup butter and the brown sugar, stir in the raisins and ground cinnamon. Drop small amounts into the greased muffin pan. Spread the remainder over evenly over the dough.

5. Starting at the short end roll the dough up (jelly roll style) and cut into 12 pieces. Place 1 each in the muffin pans.
  
6. Bake at 350 degrees F (175 degrees C) for 20 to 25 minutes. Let sit in pans for 10 minutes then invert to remove. Glaze with a milk a confectioners' sugar mixture, if desired.

Healthy Holiday Cranberry Oatmeal Cookies

Well it's definitely not the holidays but I found this recipe on pinterest and I had to make it! The ingredients were vegan and I had all that it called for so...I did! It tastes healthy but good! I shared some with the girls last night and they are already asking for more!
Check out the ingredients:


1 cup of all-natural applesauce and 1/2 stick of margarine
3/4 cup of brown sugar
1/2 cup natural sugar substitute
2 tbsp of flaxseed (in place of the eggs)
1 tsp of vanilla
1 1/2 cups of all-natural whole-wheat flour
1 tsp of baking soda
 2 tsp of cinnamon
3 cups of oats
1 cup of craisins

 Definitely my cup of tea ;)

Coconut Ulu ( Breadfruit) Smash

So it's breadfruit season here in Honduras and I had a breadfruit too long and decided to boil it! It wasn't going the way I wanted it to, so I decided to try this recipe....It tastes great but I can't even show what it looks like! It looks almost like one big potato mash! I'm still looking forward to lunch today though :D


Directions:

    Steam chunks of breadfruit until soft but not mushy.

    When done, rough chop while still hot and measure 1 1/2 cups.

    Warm coconut milk in a large sauce-pan on medium heat.
  4. 4
    Add breadfruit to warm coconut milk.
  5. 5
    Mix well with a whip to make a thick puree.

    Adjust thickness with coconut milk and mix until smooth.

    Season with salt and pepper and add chives.

    Mix well and serve immediately.

Cornbread!!!!!!

Once cornmeal comes back into the supermarket I'm so making this!!! Yes, I have a thing for cornbread lol! And thanks to Emily I now have to have little pieces of corn in it. :D

Sweet Cornbread

1 cup all-purpose flour
1 cup yellow cornmeal (I like a fine ground cornmeal personally)
3/4 cup sugar, plus more for garnish
1 teaspoon salt
3 teaspoons baking powder
1/2 cup plain non-dairy yogurt or blended silken tofu
1 Tbsp flax-seed blended into 1 cup vanilla plant milk
1/4 cup coconut oil (or margarine) melted

Directions:
Preheat oven to 400 degrees F.
Liberally grease a 9 X 9 pan or 9-inch cast iron skillet.
In a large bowl, combine flour, cornmeal, sugar, salt and baking powder.
Blend yogurt, plant milk/flax and margarine into dry ingredients until well combined.
Don’t over mix, the batter will be a little lumpy.
Pour batter into prepared pan.
Sprinkle top of cornbread with additional 1 Tbsp+ (more if you like that sugar-crunchy topping) of granulated sugar.
Bake in preheated oven for 20 to 25 minutes, or until a toothpick inserted in center comes out clean.
Let cool 10 - 15 min before cutting.
Drizzle with maple syrup when serving, if desired.

UPDATE:::: 

I tried it but forgot the oil!!! YIKES! It was a little dry but it tastes so good!

Applesauce!!!!

I believe it´s time I start making my own applesauce...you just never know what you are getting in the bottle when you buy it from the supermarket. Plus, I found a really easy recipe that requires me to use my slow cooker! Frankly, the thing does not get used as much as I would like it to be so... I will try this and do an update. Quinoa cranberry muffins

So I´ve had a box of quinoa sitting on my shelf for the past 5 months and when I stumbled across this recipe by Martha Stewart I decided that I had to try it! I veganised it by using Energ egg replacer and soy milk. I am not a huge fan of rasins so I used cranberries....apart from these few changes I followed everything to the "T".

They are in the oven right now but I tasted the batter and it seems amazing already! The quinoa should add an interesting texture to this muffin...

Cranberries!!!!!!!!!

It is two minutes before bedtime and my stomach is full! I felt like making cranberry bread tonight and I couldn't find what I thought was a good recipe with all the ingredients that I had, but I finally decided on this one because a wise person told me never to give up on a recipe because you don't have all the ingredients.

 I was quite shocked when I saw that it had no yeast! It also called for orange juice which I never have. For the wet ingredients I had oil and applesauce; after a while I added just enough water so that the pieces of flour all held together. I added 1/4 cup more flax seed because this will be my breakfast bread for this week and I used pecan meal instead of chopped pecans.

 It was sooooooooo good! I must admit I didn't wait for it to cool. :( I just couldn't stop tasting it!

 My gym instructor is going to make me pay for it! I feel like she knows all the bad things that I do and punishes me for it! lol! Pics later (Hopefully before I devour it lol!)

Quiche!!!!!!

Made a quiche today... among other things with this very abstract recipe I found on some question and answer website:

make a pie crust 

sautee some shallots, leeks, onions, scallions, shitake and garlic and spinach. Season with black pepper and sea salt 

In a blender throw in a block of silken tofu, 1/2 cup soymilk, 1/2 teaspoon of tumeric and blend very well. Add this to the sauteed vegetables and place this in the pie crust. bake at 350 for 45 minutes


Because the recipe was soooo abstract, for my vegetables, I sauteed some onions, spinach, and celery. After I added the vegetables to the tofu, I added sweet corn from the can and chopped olives. Then I decorated with tomatoes to make it pretty :)
I forgot to do a taste test before I put the mixture in the crust. It needed a tiny bit more salt but it was still great.

Now normally I never try a recipe from a website that doesn't have a review on a recipe (been burnt 1 too many times!) but, the supermarkets here in Comayagua have been stocking up on silken tofu...I don't know why but I've just been buying them! I'm down to 5 from 8! I'm hoping to get as creative with the tofu as possible and this is the next un-reviewed recipe I'm going to try:

one package in blender 
banana in blender 
dump in some cocoa powder 
splash of soymilk 
splash of maple syrup 

zzzzzrrrrrrrooooommmmmm 

have a spoonful 
adjust with more cocoa or more sweetener if needed -- maybe a pinch of sea salt 

zzzzzrrrrrrrooooommmmmm 


chocolate-banana-tofu pudding. yum. 
either eat it right there, out of the blender jug, standing at the counter cause it's so damn good, or restrain yourself and pour it into something and chill it for a couple hours so it firms up. (it'll be runny straight out of the blender.)


I'm hoping that it will come out like she says lol! zzzzzzzzzrrrrrrrrrooooommmmmmm!
