Another Delivery!!!!

One vegan fatty is my girl!!!! This time she hooked me up with a Boston cream pie and some cinnamon pillow cookies!!! In love!

Bakes-Grenadian fry dumpling

This is exactly like a Jamaican fry dumpling except for the fact that oil us added, the dough is left to sit for a few minutes and it is rolled out flat! Niiiiiice! Is it nicer? No comment! :P

Millet loaf

Really feeling this millet loaf recipe I got from yummly.com. I didn't even need to add the flour! This has definitely been an experience...I didn't know millet could fluff like couscous and it took ages but I made a huge dinner n desert entonces fue bien!

Pumpkin bread

I finally worked up the courage to use half of a can of pumpkin my beau gave to me and I made pumpkin bread!!! I even went out and bought special sugar! Fat free vegan has an awesome recipe which I followed to a T (i omitted the applesauce and used pecans instead of walnuts) but I didn't use the correct temperature and burnt it :( it still tasted amazing tho! My mom kept texting me about the fact that she's having it with Swedish glacé vegan ice cream and how amazing it is. I will be doing this again really soon-it was so good! Even my bro commented on how good it smelt-and he avoids all things vegan!

New Addition a la familia

For Christmas I asked for a decent blender, food processor, waffle iron or slow cooker....you can see where my interests lie! I bought a set from wowcher-cooks professional food processor, that comes with a food processor, blender jug, juicer and kneading attachments along with various other graters and spatula. I'm excited to make my first green smoothie tomorrow but let's not forget the last minute Christmas shopping that needs to be done! :D

Pomegranates

Tis the season! Tons of pomegranates are around....some even as big as my face!

Enjoy responsibly! ;)

Chocolate chips!!!

They have landed in England guys!!! I have been thinking about ordering it from the American grocery store on amazon forever! England is finally catching up with the times...slowly but surely! :D

Thank God I'm vegan!!!!

Canned saltfish!!!!! Never thought it would come to this, but here we are guys! Traditionally this comes dried in a packet, sometimes just about wrapped in plastic but now it's canned! I wouldn't even know how to approach this if I was a fish eater! :/ You live and you learn!

What a vegan eats out in Britain

Simple but always a safe bet! Jacket potato with beans and garlic flat bread (too much white flour but hey!)

Chocolate chip muffins!

I had some chocolate chips I brought back from Honduras and after munching on most of them I decided to make something with them before they finished! :D I stumbled across this website and started making it before I read the reviews! Big no-no! I quickly came to my sense when I saw that the mixture was too dry and in the comments people said they added one cup of milk. I added this and produced: MAGIC! Enjoy! :D

Veggie patties

Mom bought some chick pea flour on a whim and I was looking for recipes to use it in and found this on Yummly for veggie patties. It needed a little more salt so I added it and a bit more water...it was great! :D

112 cups gram flour
1 tsp ground cumin
1 tsp salt
1 tbsp fresh ginger (grated)
jalapeno peppers (minced)
carrot (grated)
onion (minced)
2 tbsps parsley (minced cilantro)
1 cup corn (kernel)
23 cup water
2 tbsps vegetable oil
1Mix the seasonings with the chick pea flour.
2Slowly mix in the water, working well to remove all lumps.
3Stir in the vegetables.
4It is best to let the batter sit for 1 hour or more, although they can be cooked at once.
5Heat a tablespoon of oil in a heavy skillet over medium heat, and spoon in the batter to form patties.
6Fry until browned on each side, about 5 minutes per side.
7Do two or three at a time.
8Add 1 tbsp more oil for the second batch.
9These are nice served with tamarind sauce or even a steak sauce like H.P.

Chia seed and dried cherry scones

These are the BOMB! I made no changes to the recipe except for the fact that I added water instead on soy milk and they still came out great! :D

Spring rolls!

I wanted to try something new today and Em inspired me to make spring rolls. I wanted them fresh so I used the following as a guide:
http://iowagirleats.com/2010/05/19/how-to-make-fresh-spring-rolls/
I made my own version by only using lettuce, cucumber, carrots and tofu pieces soaked in soya sauce followed the peanut recipe and their how to wrap. Despues? Voila!

As you can see my wrapping skills got better eventually! :)
Enjoy..
