We always do meatball around here. Personally I don't because everyone else does but I tried a new recipe. I thought it would never work because it has too many things in it from the following website:

Biscuits 'n' gravey
This is the bomb! I have a thing for biscuits but I didn't know other people did too until I came to Honduras and saw that they had it as an actual meal! So here it is yáll the biscuit recipe (courtesy of Renee) then the gravy recipe (by Emily's Mom)! I don't personally drizzle my biscuits but you can if you like...
The gravy recipe is pretty simple: make a roux after sauteing the butter with onion then add water to make it thick to your liking. Season to taste with soy sauce, nutritional yeast, pepper, garlic etc then add Bacó bits to get the rest of your protein ;)
Honey Biscuit Recipe
Prep Time: 20 minutes
Cook Time: 15 minutes
2 cups of flour
3 teaspoons baking powder
1 teaspoon salt
1/4 cup of unsalted butter, cubed
2/3 cup of whole milk
Honey
Preheat oven to 425 degrees. Grease a cookie sheet.
In a large bowl, sift in flour, baking powder and salt. Cut in butter until the mixture resembles cornmeal. Mix in 2/3 cup of milk and combine well with hands.
Place dough on floured service, roll out and cut into circles or drop dough in tablespoon sizes onto the cookie sheet.
Cook for 15-18 minutes until golden brown. Remove and brush honey onto the top of the warm biscuits. Serve immediately.

Banana Oat Clusters
I made this recipe because I also love anything with bananas in it! I found it from surfing on pinterest-this website is a gold mine for people who like to try new things! There are just so many ideas on there! At first I couldn't understand the obsession. Unfortunately, I didn't find out until I was hooked.

3 well ripened bananas
2 T vanilla extract
1/4 C olive oil
2 C rolled oats
1/3 C wheat germ
2/3 C finely chopped almonds
1/2 C unsweetened coconut flakes

1/4 tsp salt
1 tsp baking powder
1/4 C semi sweet chocolate chips {optional}

Mini Apple Donuts
I have a love hate relationship with cooked apples so we'll see how this turns out!
Ingredients:
- 1/4 cup of white sugar (194)
- 1 1/2 cups of finely diced apples, peeled and cored (86)
- 1 1/2 cups of plain flour (683)
- 1 3/4 tsp baking powder (8)
- 1/2 tsp salt (0)
- 1 tsp nutmeg (12)
- 1/3 cup of chilled unsweetened applesauce (35)
- 1 egg (63)....energ
- 1/4 cup of milk (31) soy
- 1/4 cup of lightly packed brown sugar (140)
Directions:
Preheat your oven to 350F. Whisk the flour, baking powder, sugars, salt and and nutmeg in a bowl. Add the chilled applesauce. Mix the applesauce with the flour mixture until the mixture resembles coarse crumbs.
In a separate bowl, beat the egg. Mix in the milk and fold in the chopped apples. Add the egg mixture to the flour mixture. Stir using a spatula or spoon making sure not to overmix. Place a spoonful of batter into each mold of a buttered mini donut pan (Note: If you do not have one of these, mini muffin pans work fine, too!)
Bake for 15-18 minutes or until the donuts are just golden. Remove from the oven, unmold and serve immediately.Nutritional information (per one mini donut): 53 calories, 0g total fat
Pizza fiesta!
Made pizza today! It was amazing! I almost ate the entire thing in one go! (Yes, I know, shameful, but still!) I love this recipe because I could put whatever I wanted on top! As long as I have my base-tomato sauce, pesto, cheese etc-I can put everything/anything I can imagine on top! Rico!
Made the crust from the following recipe and it was amazing! http://allrecipes.com/recipe/master-pizza-dough/detail.aspx It was a thick crust pizza but it was fluffy and I added a couple of teaspoons of flax seed to make me not feel too guilty about the fact that I used all white flour! I must say the dough looks pretty with the sprinkling ;)

Single-Serving Cupcake
One might say that this is rather selfish but, when you're at a gathering and you can't eat the dessert, you have to encourage yourself! I came across this recipe before and now was the perfect time to try it. I had to whip it up quick time and this was the BOMB! I must make more of these.... Check out the ingredients!
- 3 tbsp whole wheat pastry flour
- 1 tbsp raw sugar
- ¼ tsp baking powder
- ¼ tsp vanilla extract
- 3 tsp fruit jam
- 1 tbsp non-dairy milk

PEANUT BUTTER GRANOLA
I love everything peanut butter, especially here in Honduras, so of course I had to try this thing. And! It's so simple. I used the following recipe from the website below and it was amazing!

Carrot hummus!
I love hummus it's like the perfect vegan got-to meal and there are many different ways to dress it up! It is so easy!!!! All one needs to do is throw everything in a blender, blend and hey, presto! Today I made it using some left over carrots from carrot juice...season to taste and enjoy!
- 1 cup(s) carrot(s), chopped
- 1 can(s) beans, garbanzo (chickpeas), rinsed and drained
- 1/4 cup(s) tahini (sesame seed paste)
- 2 tablespoon lemon juice
- 2 clove(s) garlic, quartered
- 1/2 teaspoon cumin, ground
- 1/4 teaspoon salt
