Chocolate chip muffins!

I had some chocolate chips I brought back from Honduras and after munching on most of them I decided to make something with them before they finished! :D I stumbled across this website and started making it before I read the reviews! Big no-no! I quickly came to my sense when I saw that the mixture was too dry and in the comments people said they added one cup of milk. I added this and produced: MAGIC! Enjoy! :D

Veggie patties

Mom bought some chick pea flour on a whim and I was looking for recipes to use it in and found this on Yummly for veggie patties. It needed a little more salt so I added it and a bit more water...it was great! :D


112 cups gram flour
1 tsp ground cumin
1 tsp salt
1 tbsp fresh ginger (grated)
jalapeno peppers (minced)
carrot (grated)
onion (minced)
2 tbsps parsley (minced cilantro)
1 cup corn (kernel)
23 cup water
2 tbsps vegetable oil
1Mix the seasonings with the chick pea flour.
2Slowly mix in the water, working well to remove all lumps.
3Stir in the vegetables.
4It is best to let the batter sit for 1 hour or more, although they can be cooked at once.
5Heat a tablespoon of oil in a heavy skillet over medium heat, and spoon in the batter to form patties.
6Fry until browned on each side, about 5 minutes per side.
7Do two or three at a time.
8Add 1 tbsp more oil for the second batch.
9These are nice served with tamarind sauce or even a steak sauce like H.P.

Spring rolls!

I wanted to try something new today and Em inspired me to make spring rolls. I wanted them fresh so I used the following as a guide:

I made my own version by only using lettuce, cucumber, carrots and tofu pieces soaked in soya sauce followed the peanut recipe and their how to wrap. Despues? Voila!




As you can see my wrapping skills got better eventually! :)
